How to Julienne Vegetables for Salads and Bowls

Learn how to use a julienne peeler on firm carrots, cucumber and similar vegetables with a stable setup, controlled strokes and careful cleaning.

A julienne peeler can turn firm vegetables into narrow strips for salads, bowls and garnishes without adding another bulky tool to the drawer.

Start with a stable setup

Wash and dry the vegetable, clear the work surface and place a cutting board where it cannot slide. Firm carrots, cucumbers and similar produce are easier to guide than soft or uneven pieces.

Choose the blade for the result

Use the smooth edge when you want to remove the outer layer. Turn to the julienne edge when you want narrow strips. Keep the unused edge and your fingers away from the cutting path.

Use controlled strokes

Hold the vegetable securely and work away from your hand with steady pressure. Rotate the produce as needed instead of forcing the blade through a difficult angle.

Clean before residue dries

Rinse the blade carefully after use, remove trapped vegetable fibers without touching the cutting edge and dry the tool before storage.
